White Valentine Sleepers Ingredients: For the sponge 150g of butter 130g of milk 100g of caster sugar 150g of self-raising flour 4 large eggs 1 tsp of vanilla extract 1 tsp of baking powder 4 tsp of cocoa powder A pinch of salt For the layer cream 100g of double cream A bar of dark chocolate For the topping cream 300g of double cream 50g of caster sugar Method: 1. Preheat the oven to 180 Celsius (gas) or 160 Celsius (fan), 356 Fahrenheit (gas) or 320 Fahrenheit (fan). 2. Add self-raising flour, baking powder, cocoa powder, sugar and a pinch of salt into a big bowl and mix them well. 3. Melt the butter (you can put it in microwave for 30-40s). Then, add the melt butter, vanilla extract, milk and eggs into the mixture. Mix them until it smooth. 4. Pour the smooth mixture into a baking mould and put it in oven for about 30-45 minutes. ( Check every 5 minutes after 30 minutes) 5. Meanwhile, make the layer cream. Heat the double cream gently in a saucepan and chop the dark chocolate into small pieces (easier to melt). 6. When the double cream is just under the boil, pour it to the chopped dark chocolate, ensuring the dark chocolate is all covered. Mix the mixture well. 7. By the time, the cake should be cooked. Take out the cake and allow it to cool for 30 minutes. 8. Cut cake into shape of sleeper. (very difficult :D) 9. Cut the cake into two layers and top the chocolate cream on the bottom layer of the cake. Then, put the top layer of the cake on it. 10. Make the topping cream. Add both the double cream and caster sugar into a big bowl and mix it with a mixer machine for 2-3 minutes. ( have to be very careful as it will become very thick if you over mixed it). The cream is ready to use. 11. Cover the cake with the cream and start decorating.
